Line a 12 cup muffin pan with paper cupcake holders.

* 500g Rama or Wooden Spoon margarine, softened at room temperature

* 1 to 2 teaspoons vanilla extract (optional, for flavor)

* 1 to 2 tablespoons milk or water (optional, to adjust consistency if needed)

Place margarine into a large bowl. Beat using a hand mixer or stand mixer on medium-high speed for about 3 to 5 minutes until it becomes smooth, creamy, and slightly pale.

Sift the icing sugar to remove any lumps.

Add it to the margarine in batches (about a cup at a time), mixing on low speed after each addition so the sugar doesn't fly out of the bowl.

Once all the sugar is combined, add the vanilla extract if you are using it.

If the icing feels a bit too stiff for spreading or piping, mix in a splash of milk or water a little bit at a time until it reaches your perfect texture.

Mix ingredients together in a bowl, until creamy.
